Tripel update and the next batch
The tripel was active for about 2 full weeks - which is a bit longer than I anticipated. It's now in a secondary settling out, and I should be able to bottle it on Friday or Saturday.
In the meantime, I just got a breakfast stout brewed on Saturday, full with coffee and chocolate. I'm really excited to see how that one turns out, but am a bit worried as the yeast I used was a bit past its prime. I did a starter, but ran out of time to wait for it to do the job. Hopefully fermentation starts in a few hours - maybe even by the time I get home tonight or tomorrow from work.
